This looks really good.I would a shitload of onions too. I love onions.
I would have put grated lemon or lime and a splash of lemon or lime juice but didn't have any. I did use some Strongbow; hard cider. It really was good and I agree that some sauteed onions would have set it off just right!
Olive oil garlic lemon juice parsley crushed chili flakes and a good splash of srirachi chili sauce...yum yum
